INGREDIENTS 1 block extra-firm tofu 1 large bunch greens, such as bok choy, washed and trimmed 1 red or yellow bell pepper, sliced into thin batons 3 cloves garlic, minced 2 tablespoons cooking wine, such as mirin 3 tablespoons Youjia Fermented Soybean Paste 3 tablespoons minced green onions
PREPARATION
1.Press tofu with paper towels or a clean dishcloth to remove excess water, and place in preheated non-stick pan.
2.Toss frequently without adding oil until tofu is browned on all sides, and addminced garlic.
3.Sauté until garlic becomes fragrant, and add bell pepper,cooking wine, and Youjia black bean chili sauce.
4.Sauté for 2 minutes, and thenadd the greens.
5.Cook, stirring constantly, until greens are just wilted butstill have crunch.
6.Serve with brown or red rice, garnishing with minced gree nonions
